Why the aluminium core matters

This is where the discussion around titanium actually becomes particularly interesting.

Titanium, stainless steel and carbon steel all have different physical characteristics.

Highly conductive materials such as aluminium and copper are therefore commonly incorporated into premium multi-layer cookware because they spread heat much more effectively.

The difference can be measured.

In our heat-distribution testing, traditional single-layer carbon steel recorded:

Temperature difference: 19.4°C

Temperature difference: only 5.7°C

The important number isn't simply the centre temperature.

It is the significantly smaller temperature variation across the cooking surface.
