We partnered up with Seggiano Foods to bring this deliciously free-from pasta dish perfectly baked in our SAVEUR Selects enamelled Cast Iron 4.7L Casserole.
This pan's large capacity makes it perfect for feeding 6-8 people with a start-to-finish cooking time of 1hr.

Ingredients:
- 1 Medium cauliflower
- 1 Medium broccoli
- 1 Large courgette
- 100g spinach
- 1 x Bag Seggiano Green Pea Gluten Free Fusilli
- 1 x Jar Seggiano Raw Basil Pesto
- 150g Vegan cream cheese
- 100g Panko breadcrumbs
- 100g Grated vegan cheddar
Recipe:
1) Preheat your oven to 190°C and begin cutting the cauliflower and broccoli into small florets.
2) Grate up the courgette, and shred your spinach, we have the perfect bowl set for collecting your ready-to-cook ingredients and help organise your meal prep.
3) Add boiling water to your large heavy-based oven-proof pan and soften the cauliflower for 2 minutes.
4) Next in the pan goes the broccoli, continue cooking both the broccoli and cauliflower for an extra 2 minutes.
5) After this, the pasta joins the vegetables. Allow it all to cook for a further 2 minutes.
6) Carefully pour away the liquid using oven gloves and drain thoroughly, leaving the cauliflower, broccoli and pasta to steam dry.
If you’ve used a colander, return the contents to the pan. One of the great features of cast iron dutch ovens is that they will retain lots of heat ready for you to continue with the next part of this recipe.
7) Gently mix through the courgette, spinach, vegan cream cheese and Seggiano basil pesto.
8) In a separate bowl toss the panko breadcrumbs with 2 tbsp of olive oil. TOP TIP: Use the excess oil on top of the jar of pesto for extra flavour!
9) Throw into the bowl your grated (vegan) cheese and a pinch of salt to season the breadcrumbs.
10) Sprinkle this tasty breadcrumb mix over the top of the pasta and bake for 30 mins in your preheated oven. When ready serve immediately.
...Should there happen to be any leftovers, portion into containers and freeze until next time.

You’ll need:
Your ‘Go To’ non-stick pan.
&
.... something to chop, grate and mash.
We've chosen the On&Off Non-stick detachable handle sauté pan for its high-performance non-stick, perfect for keeping the wrap and bean mix loose on the cooking surface.
The toolbar mixing bowl and colander set is a convenient kitchen tool for straining canned black beans, kidney beans and chickpeas etc from their excess liquid. After which we like to give them a good rinse to remove the aquafaba.
Once drip-dried, the stainless steel bowl provides the perfect container for mashing up the rest of the ingredients with the beans ready to fry.
- 3-4 Tortilla wraps
- 1 Tin of black beans (drained and washed)
- 1 Preferably red onion (grated)
- 2 Cloves of garlic (finely grated or use pasté)
- 2 Glugs of Reggae Reggae Jerk sauce (75ml)
- Seasoning (Salt & Pepper)
- 3 spring onions or a small bunch of chives
- Cherry tomatoes (Sliced)
- (Optional) Hand full of cheese or vegan alternative
1) Into the toolbar set goes a whole tin of black beans to be drained and rinsed in the colander. After this, 2 generous glugs of reggae sauce. Mmmmm....
Grate the onion into the mixing bowl, add your finely grated garlic or substitute for any paste/puree you have in the cupboards, these also work well too.
Mash it all up until the mix is starting to stick to itself.
Warm up your pan with a little oil; just a small amount of rapeseed or light olive oil is perfect to stop the bean mix from sticking. Once the pan’s hot, blob into the middle a ladle-sized portion of bean mix.
Flatten the bean mix pile with the back of a spoon or spatula, still keeping it all intact. Doing this should spread the portion into what looks a bit like a flattened burger pattie.
Allow to cook for 2-3 minutes then add your tortilla over the top. If adding cheese sprinkle over the top of the beans. Cheddar or any melty vegan alternative works well.
With the ladle, or very carefully with your hand… press down on top of the wrap to squash the bean mix outwards under the tortilla.
Allow another 2-3 minutes. Then flip it onto a plate.
Garnish with chopped cherry tomatoes and top with spring onions or chives.
Enjoy with a drizzle more Reggae, sour cream or dairy-free alternatives make nice additions.
We recommend exploring with guacamole, lettuce leaves and some homemade salsa to create your perfect alternative to a weekday sandwich.
It's up to you whether you leave it open like a taco, wrap it up like a burrito, or fold it in half like a quesadilla. Enjoy it how you want!

1) Use less water and get cleaner food
When washing dirt, pesticides and dust from off of our fruit or veg, we usually just rinse them in a colander under the tap in an attempt to get the muck off. This means water gets wasted and often the water pressure isn't high enough to spray dust off.
Using this set, run the tap over the vegetables until the bowl is now a water bath. Use this to dunk your ingredients, swish them around, or even soak in salt to more effectively wash dirt and bugs off. The colander’s micro-perforated holes provide edges for particles to dislodge against, improving the scrubbing.
Once your food is nice and clean, lift the colander out of the bowl and strain your food from the water so it can begin to dry.
2) Wake up your ‘Straight to wok’ noodles
Just minutes before your roasted or stir-fried food is ready, add your straight-to-wok noodles to the colander (inside the bowl) and pour over kettle-boiled water until the noodles are submerged. With a fork, separate the noodles and allow them to soak for 2 minutes heating them through.
Be mindful of the hot water while removing the colander from the bowl. Pour away the water and return the colander to the bowl, allowing the noodles to briefly drip dry before tossing everything together.
3) Removing excess aquafaba - from canned food
Aquafaba (otherwise known as ‘the water surrounding your canned beans and chickpeas’) is known to be useful as an egg substitute in baking or cocktails and to give you excess wind.
For those who like to use chickpea juices, straining your tinned chickpeas into the colander over the bowl allows you to collect the leftover aquafaba and pour it conveniently into a jar for later.
Once you’ve discarded the aquafaba, you can clean your canned food in the colander (inside the bowl) while saving water. Removing excess aquafaba may also help with reducing 'excess gas'.
4) Extra crispy homemade chips
Whether you’re airfrying or oven roasting, soaking your fresh-cut chips in cold water for 20 minutes is a neat trick to make them crispier than McCains.
For best results, use the colander to quickly bath your chips to remove amylose. This type of starch makes amazing mashed potatoes, but sadly also sticky and soggy chips.
Give the chips a stir, and after 10 minutes lift the colander out of the bowl and change the water before it becomes too cloudy. Always dry your chips in a clean tea towel or kitchen roll before frying.
5) A handy compost caddy
After washing fruits and vegetables, keep the set out to collect your choppings.
For dry items with larger chunks like root vegetables, the colander works perfectly to collect leftovers, for everything else throw it in the bowl part ready for the compost bin or food waste collection box.
6) Soaking legumes, beans, and pulses

Leave the colander inside the bowl and cover with water, soaking your produce for the required duration. Place an overturned plate on top, especially if leaving overnight.
Once done, lift the colander out of the bowl and pour away the water.
7) Spice, marinate, and toss.
You may have added a few large handfuls of vegetables, or possibly taken our advice on soaking the potato chipsl and have now added these to the bowl.
The next step to create delicious chips, roasted vegetables or chicken pieces is to apply some oil and seasoning before baking or air frying.
By leaving the colander in when you do this you can make sure any excess oil drains away.

]]>It’s that time of year again and hasn’t it come around quick! Congratulations to those whose Christmas presents are all wrapped up, you deserve to put your feet up in front of a toasty log fire and sit back with a glass of mulled wine.
If you’ve never made mulled wine before you’re in for a treat. Not only is it tastier than the cheap bottled stuff it’s very easy to make from ingredients you’ll probably have in your spice collection.

Depending on the size of your batch, how many guests you’re catering for, and how squiffy you feel like getting we suggest you save energy and adjust your vessel accordingly.
Under the unique double-walled lid of this pan, your wine will heat up quickly and efficiently.
The best at retaining heat when the hob is turned off Thus keeping your wine servable for second and third helpings.
Well done that’s quite the crowd. This will do the trick (see below).
This ensemble of ingredients has been tried, tested, and makes a deliciously complex treat to welcome guests into your home or to unwrap presents with.
Unlike most recipes, our twist here is to make up a batch of syrup while simmering to add before serving. This way you can tailor the drink to individual sweetness preferences which can range from “I’m sweet enough already thanks,” to “a few spoons full of sugar help the alcohol go down”.
If you do wish to add syrup to the main batch you can easily, splosh, stir, taste, repeat until your taste buds are satisfied. Start with 50ml of our syrup recipe below and increase to the desired amount stirring through.
Wine….
Any nice dry red will do the trick. Malbecs, merlots, and cab savs are all great. There’s no need to look too high up the shelf when choosing a wine, something around the £5 mark works wonderfully. A simple rule for some guidance: If you wouldn’t cook with it then don’t mull with it.
Spices & flavourings…
Mulled wine is of course, a hot and warming beverage. Serving in a wine glass could be a big mistake. Make sure your vessel of choice is heatproof. A cute teacup and saucer is one way to add some wow. Dad’s favourite coffee mug or if you have the thick glassware used to serve Irish coffee or baileys hot chocolate in, great! Allow your drink to cool down from boiling point before ladling up.
Why not fill up a reusable coffee mug before jauntily heading off on a walk or to a Christmas market?
Mulled wine will continue infusing as long as the spices are still mixed in. To avoid bitter flavours from taking over, strain or fish them out with a sieve from your mulled wine after 30-40 minutes. You can save the wine for later by pouring it into the bottle it came from.
Not at all necessary but a lovely touch to the masterpiece. Try any of the below
Peel your citrus fruits with a vegetable peeler leaving as little of the white pith on the peel as possible (this adds a nasty bitterness). Slice your ginger into three pound-coin-sized pieces skin on skin off, it’s up to you.
Pour your wine into your chosen pan and add in the rest of the ingredients (except the orange juice) and stir.
Bring the mixture to a simmer being careful not to boil, then keep on a low simmering heat for 20-30minutes, add the fresh orange juice in the last 5 minutes.
